Hello,

The meat for shawarma is actually just beef/lamb/carabeef that is sliced and stacked up.   The flavor will depend on how fat the meat that you use and how you pre-prep the meat.   Most suppliers will be able to supply it if they have the meat slicer.

Cayenne pepper is also known locally as siling labuyo.

I hope this helps.

Cheers!

hi lynn,

we never use carabeef with our shawarma. it maybe cheap but based on our research, carabeef meat is stiff and the color is darker than pure beef meat.

be careful when you deal with suppliers because there are some who takes advantage of others. :)

Late reply.  Oo, matigas ang carabao beef.  Cayenne pepper can be bought in the groceries, meron non ang McCormick.  Check mo rin kung meron sa mga per grams na spices.  Mas maanghang ang siling labuyo at may buto pa.

For Indian spices you can go to Uncle Eds at UN Avenue.
