Chili Sauce

hello po, bago pa lang po ako sa forum, baka po sakali meron nakakaalam kung papano gumawa ng chili sauce (ung para pong chili sauce ng chowking), nag try na po kc ako mag experiment kaso hindi po nagiging thick and sticky ung resulta sa halip nasusunog po ung sili, thanks po in advance...

Hello,

You will need the following ingredients:
Water
Vinegar
Corn Starch
Sugar
Chili
Salt

Basically, you just mix everything up and simmer gently until you reach the desired consistency.   I'm sorry if I can't put here the amounts since we are still under a confidentiality agreement with a client.   I can say that the ingredients I listed are placed in decreasing amounts.

mam gerel, pardon po, un pong chili sauce na usually ginagamit sa siomai and pwede rin po gamitin sa noodles as spices, napakamahal po kc ng price ng sili ngayon, sa tingin ko po kc mas mapapatagal or maprepreserve nya ung life span ng sili kung lulutuin sya kesa i-maintain sa ref, thanks po sa reply and more power...

It's OK.   It's not the first time.  ;D

About the chili sauces: yes, the chili sauce for siomai can also be used for the noodles.   There's a lot of ways to preserve chili, not just by cooking them.   You can use blanched chili to make chili-vinegar or chili-oils and still be able to use the chili for whatever purpose that you want to use it for.   All you have to do is blanch the chili and then place it into the vinegar or the oil.   You just have to be careful with the blanching process and monitor the proper time and temperature since you can introduce a food-poisoning bacteria that causes botulism if you are not careful.   You can also dry this using a drying oven for future use.   If you need the chili year round in quantities, it is also advisable to plant some yourself since this is a very low maintenance plant and can typically supply you with about a kilo per plant per month with just a once-a-day watering.
